Food safety has always been an important part of the country’s livelihood construction. Why does the country set up food production licenses? What conditions must be met to pass the record with the China Food and Drug Administration (CFDA)? Food companies with a certain history may be relatively clear about the construction process of food factories, and when many new food brands are planning to build large-scale factories or small-scale workshops, most of them are not clear about what they should do to meet food safety requirements. . The cleanliness of the plant construction, the establishment of the flow of people, logistics and technological processes, and the control of the flow of production workers, management personnel, visitors, on-site quality control, sanitation and maintenance personnel, products, ingredients, rework and packaging materials can all reduce food safety risks.

In the process of food safety supervision and sampling organized by the General Administration of Market Supervision, several problems often occur: microbial contamination, excessive pesticide and veterinary drug residues, detection of non-edible substances, excessive use of food additives, and substandard quality indicators. The "General Hygiene Code for Food Production" (GB14881-2013) stipulates the basic requirements and management guidelines for sites, facilities, and personnel in the purification workshop of food factories for raw material procurement, processing, packaging, storage, and transportation, which are commonly adopted by food companies General specification. In this specification, the production area is clearly divided into clean operation area, quasi-clean operation area, and general operation area according to the degree of cleanliness.

Clean work area: The sanitary environment requirements are the highest, and the requirements for personnel and environment are high. They must be disinfected and changed before they can enter, such as: raw materials and finished products exposed processing areas, food cold processing rooms, ready-to-eat food cooling rooms, waiting rooms Storage room for packaging ready-to-eat food, inner packaging room for ready-to-eat food, etc.

Quasi-clean area: the second is required, such as raw material processing, packaging material processing, packaging, buffer room (unpacking room), general production and processing room, non-ready food inner packaging room and other finished products processing but not directly exposed areas.

General operation area (non-clean area): general raw material, finished product, tool storage area, packaging finished product transfer area and other areas with low exposure risk of raw materials and finished products, such as outer packaging room, raw and auxiliary material warehouse, packaging material warehouse, and outer packaging workshop , Finished product warehouse, etc.

2. The flow of people in the laboratory goes through the locker room to change clothes and shoes → wash room to wash hands → buffer room → air shower → various operating rooms.

3. The logistics of the food workshop goes from the outer corridor through the mechanical chain self-disinfecting transfer window, disinfected, enters the buffer corridor, and then enters the operating rooms through the transfer window.

4. About the structure of the workshop According to the "Code for Design of Clean Food Workshops", the walls and ceilings of the workshop must be constructed with materials that do not produce dust and do not accumulate dust and have a smooth surface, and there must be no dead corners in the workshop. Use special color panels for purification plant construction, use purification plates for the top plate of the substrate, and special aluminum profiles for aluminum. In order to improve the service life of the purification room and achieve a beautiful and generous effect, all aluminum profiles are electrophoresed.

5. About the floor of the workshop The floor is made of solvent-based epoxy resin, and the surface is dense, without sand, hollowing, and cracks. 6. Ventilation and air purification equipment The food dust-free workshop design, in accordance with the specification requirements, design a return air system. The computer room is located on the top side of the plant (according to the actual situation, the unit type purification system can be used, and the computer room is not required), and the return air circulation ducts are connected to the air conditioning unit in the technical mezzanine to form a system. The return air duct is made of high-quality galvanized steel plate and is softly connected by a damper. Galvanized steel ducts are made on site.

7. Illumination Ceiling-type purification lamps should be used in clean areas, and ordinary fluorescent lamps should be used in non-clean areas. The lighting in each room is designed, and the ultraviolet lamps are independently controlled, and all controlled by the electrical control box, and then centrally controlled by the main power distribution cabinet; indoor lighting adopts closed lighting groups; socket panels are embedded; indoor no open wires are laid.
